5 ingredient Turkey Burgers ūüôā

I purchased the "Simply Truth" brand of pre-portioned turkey burgers because they were on sale and cheaper than ground turkey, but normally I buy ground turkey and form it into patties. Be sure that the brand you buy does not have added ingredients such as corn syrup, etc. Be leery of brands such as "Jenni-o" and others as they tend to sneak things in that you wouldn't anticipate being added to your meat. Always check your labels, and if there's something you can't pronounce or anything with corn syrup, sugar, etc, skip it. It's worth the extra $1-2 bucks for good quality meat.

Prep time: 0-5 minutes

Cool time: 10 minutes

Ingredients:

  • 1-1.5lbs Pre-portioned turkey burgers or ground turkey
  • Garlic Powder
  • Sea Salt
  • Ground Pepper
  • Honey
  1. Place turkey patties in a large pan on medium heat. Season with garlic powder, sea salt and pepper.
  2. Cook about 5-7 minutes, then flip.
  3. Season other side and cook for another 5-7 minutes.
  4. A few minutes before the burgers are done, drizzle one side with honey and immediately flip them. Repeat this step on the other side, not leaving the honey side down more than 1 minute as it will burn quickly.

Serve with your favorite veggie (I made a pesto/kale salad that is divine and even kale haters love it). We usually serve these with homemade sweet potato fries, however we were munching before dinner, so we were really only hungry for the burgers and salad!

Coconut Curry Kale

 

I'm so exited to share this recipe with you all as it has been a household favorite for a long time. This is a great recipe for those who do not traditionally like kale! Be sure to let us know in the comments below if you give it a try.

Prep time: 5 minutes

Cook time: 10-15 minutes

Ingredients

  • 1 large bunch of kale (or half a bag from Trader Joes). Make sure to remove stems! Chop up kale beforehand.
  • 1 sweet onion chopped
  • Tbsp of garlic
  • 1 small jar of curry paste (I used thai kitchens) red or green, both are great!
  • 1 can of full fat coconut milk (I used the thai kitchen brand)
  • Sea salt and pepper to taste

Directions

  1. Sauté garlic and chopped onion in a large pan on medium heat until translucent, about 5-7 minutes.
  2. Add kale to the pan  and stir regularly until it reduces in size
  3. Season with sea salt and pepper
  4. Shake coconut milk up before opening. Add it to the kale mixture and still well.
  5. Add about 1/3-1/2 the small jar of curry paste to the kale mixture. Mix well.
  6. Reduce heat to simmer for 2-5 minutes. Season with more sea salt and pepper if needed.

Serve alongside your favorite protein. It's also delicious over rice or cauliflower rice.
