Paleo Plantain Waffles

Ingredients
  • 2-3 PlantainsThe nice thing about plantains is they don't have to be ripe for you to use them in this recipe.
  • 1tsp Vanilla Extract
  • 1.5tsp maple syrupomit if you don't want the hint of sweetness, I think it adds a nice touch
  • Pinch Sea Salt
  • 1/2 tsp Baking Soda
  • 1 Tbsp Coconut OilMelt it first before adding to mixture
  • 1.5tbsp Coconut Flour
  • 3 EggsThese are optional. I like it both ways, but the eggs add a nice touch
Instructions
  1. Slice your plantains into quarter size pieces and throw them into your vitamix or blender of choice.
  2. Melt your coconut oil and toss into mixture.
  3. Add all remaining ingredients and blend. I don't use the high speed setting, I use the low and pulse it. It likely will need to be mixed up a few times in the process. Takes about 1 minute to get a batter-like texture.
  4. Meanwhile, plug in your waffle iron. Mine does pretty well without oil, but feel free to toss a little bit of butter, coconut oil or ghee in first.
  5. Once it's ready, pour batter in and fill about 1/2-3/4 full. After it say it's ready, I check it to make sure it's firm enough to remove. I waited about an extra 2 minutes after it said it was "ready" for it to firm up. Keep a close eye out so they don't burn.
  6. Top with your favorite ingredients. I love to do almond butter and jelly, or for a more savory waffle add my favorite: mayo, prosciutto and some mixed greens. You'll have yourself a pretty tasty sandwich!
