Happy Friday friends!

I'm cozying up with a hot cup of tea, munching on some paleo plantain waffles and watching the snow fall here in Colorado. It's safe to say I soaked up every second of the 70 degree days we had for the past 2 weeks, so I can't be mad! I'm a sunshine girl through and through, but I do enjoy that the snow slows me down and reminds me how magical this town looks in the winter time!

Last week a client of mine asked me, "what the heck do you do with plantains Ali?" I'll let you in on a little secret, these little suckers are SO versatile. They are a member of the banana family, however they are low in sugar and often fried (my favorite) or baked. They have such a natural sweetness about them and I look forward to sharing many more plantain recipes with you in the future. Today, I'm excited to share these gluten, grain and dairy free paleo plantain waffles! My friends over at

I love the simplicity of this recipe (only 7 ingredients) and the fact that in 5 minutes you can have an entire batch ready for the week. I'm all about efficiency, so anything that saves me time later is a major win in my book 🙂

The best part about these waffles is you can go so many different directions with them. For more of a savory waffle, omit the maple syrup. I really enjoyed the touch of sweetness, even when making sandwiches with these. A few of my favorite things to do with these:

  1. Top with Sir Kenginston's mayo, prosciutto, a runny egg and some arugula.
  2. A "mock" very berry turkey (an old favorite from back in the day when my mom owned a sandwich shop). A layer of good quality jam, turkey, bacon and lettuce. It's the BOMB!
  3. Berries of choice with a drizzle of maple syrup or honey
  4. Banana slices with almond butter drizzled on top

Ingredients
  • 2-3 Plantains The nice thing about plantains is they don't have to be ripe for you to use them in this recipe.
  • 1 tsp Vanilla Extract
  • 1.5 tsp maple syrup omit if you don't want the hint of sweetness, I think it adds a nice touch
  • Pinch Sea Salt
  • 1/2 tsp Baking Soda
  • 1 Tbsp Coconut Oil Melt it first before adding to mixture
  • 1.5 tbsp Coconut Flour
  • 3 Eggs These are optional. I like it both ways, but the eggs add a nice touch

Instructions
  1. Slice your plantains into quarter size pieces and throw them into your vitamix or blender of choice.
  2. Melt your coconut oil and toss into mixture.
  3. Add all remaining ingredients and blend. I don't use the high speed setting, I use the low and pulse it. It likely will need to be mixed up a few times in the process. Takes about 1 minute to get a batter-like texture.
  4. Meanwhile, plug in your waffle iron. Mine does pretty well without oil, but feel free to toss a little bit of butter, coconut oil or ghee in first.
  5. Once it's ready, pour batter in and fill about 1/2-3/4 full. After it say it's ready, I check it to make sure it's firm enough to remove. I waited about an extra 2 minutes after it said it was "ready" for it to firm up. Keep a close eye out so they don't burn.
  6. Top with your favorite ingredients. I love to do almond butter and jelly, or for a more savory waffle add my favorite: mayo, prosciutto and some mixed greens. You'll have yourself a pretty tasty sandwich!
