Happy Friday friends!
I'm cozying up with a hot cup of tea, munching on some paleo plantain waffles and watching the snow fall here in Colorado. It's safe to say I soaked up every second of the 70 degree days we had for the past 2 weeks, so I can't be mad! I'm a sunshine girl through and through, but I do enjoy that the snow slows me down and reminds me how magical this town looks in the winter time!
Last week a client of mine asked me, "what the heck do you do with plantains Ali?" I'll let you in on a little secret, these little suckers are SO versatile. They are a member of the banana family, however they are low in sugar and often fried (my favorite) or baked. They have such a natural sweetness about them and I look forward to sharing many more plantain recipes with you in the future. Today, I'm excited to share these gluten, grain and dairy free paleo plantain waffles! My friends over at
I love the simplicity of this recipe (only 7 ingredients) and the fact that in 5 minutes you can have an entire batch ready for the week. I'm all about efficiency, so anything that saves me time later is a major win in my book 🙂
The best part about these waffles is you can go so many different directions with them. For more of a savory waffle, omit the maple syrup. I really enjoyed the touch of sweetness, even when making sandwiches with these. A few of my favorite things to do with these:
- Top with Sir Kenginston's mayo, prosciutto, a runny egg and some arugula.
- A "mock" very berry turkey (an old favorite from back in the day when my mom owned a sandwich shop). A layer of good quality jam, turkey, bacon and lettuce. It's the BOMB!
- Berries of choice with a drizzle of maple syrup or honey
- Banana slices with almond butter drizzled on top
