Today's featured recipe is a recent favorite, the green smoothie. I've been on a smoothie kick as the temperature outside has consistently been 60-70 degrees the last month (hello winter in Colorado). I love it so much. Sunny days, long walks in a light jacket and fresh air on my face.
I've been craving two things in the morning; veggies and something cold and refreshing. I've moved on (for the time being) from my chia seed pudding and have inserted this super easy green smoothie. The best part about this recipe? It easily packs 4-5 servings of fruits and veggies into your day in a matter of minutes. Score!
This green smoothie came to me like many of me recipes, I stand in front of my fridge and freezer and see what I can throw into a blender that will taste like magic. What I love about this smoothie is that the ginger gives it a nice kick (which you can easily omit) and the fresh squeezed lime reminds me of drinking a mocktail. It's never too early, right?
Feel free to use whatever you have in your house for this green smoothie recipe, I won't be offended 🙂 Some great alternatives would be:
- Kale instead of spinach (or a mix of both)
- Mixed berries
- Chia seeds
- Add some avocado for a rich creaminess (or coconut oil for some added healthy fat)
- A strawberry banana smoothie would probably be pretty yummy. Simply increase the banana to a full one and add a 1/2-1 cup strawberries
See what I mean? There are so many variations, you can't screw it up. That's my favorite part about cooking. For us recovering perfectionists, it's so easy to modify and be creative without getting hung up on the recipe being perfect.
