When I jet home from teaching classes to eat lunch, the last thing I want to do is spend a ton of time preparing something. Ummm hello, I conserve that energy for dinner 🙂
Enter the #avocadotunatoast! Something about the cool, freshness of this recipe on a warm (recently humid) summer day hits the spot! When it comes to meals during the day, I always coach my clients to keep things as simple as possible, but that doesn't mean you have to sacrifice your health or flavor!
Back in the May, we visited our friends in L.A. and my girl Ali made me the BEST avocado toast I've ever had. Full disclosure: I've eaten this for breakfast, snack, lunch and dinner. So I think it's safe to say this recipe will curb your avocado toast craving no matter the time of day!
I often add some wild caught tuna to pack this sucker full of protein and it's delish. I paired it with a few plantain chips and a Spindrift, but it would also be great with an apple or some fresh cut up veggies and hummus if that's how you rollllllll.

Avocado Tuna Toast
- 1 can wild caught tuna
- 1/2 lemon, squeezed
- 1/2 tsp avocado or olive oil
- 1 stalk green onion/chives
- 1/2 avocado Use a small amount to mix with the tuna, save the rest for the toast itself
- Salt and Pepper to taste
- 2 slices Toast I used canyon GF but you can use whichever you like
- Sprinkle Trader Joes Everything But the Bagle
- Mix the tuna, lemon juice, avocado oil, green onion, avocado, salt and pepper to a bowl.
- Toast your Bread
- Mash your remaining avocado on top of your toast and sprinkle with Trader Joes Everything Bagel Spice
- Top the toast with your tuna salad and enjoy!
