Sauté artichoke hearts and spinach over medium heat in a large sauce pan. Stir occasionally until warm.
Meanwhile, add cashews and nutritional yeast to a food processor. Mix about 30 seconds until you get a "meal/buttery" consistency. Scrape sides and place in to a large mixing bowl with your spinach and artichokes.
Mix everything together with your spices.
Serve with your favorite dipping foods such as carrots, sweet potato chips (our personal fav), etc!
1 cup cashews or 1/2 cup peanut butter or almond butter
1/2 cup oats
1/4 tsp salt
1/2 tsp cinnamon
3 tbsp maple syrup
1 tbsp vanilla
1/4 cup unsweetened shredded coconut
1/4 cup enjoy life choc chips
Directions
If using cashews, place the first four ingredients in a food processor. You don't want to over blend as you're looking for a "meal" consistency. If using nut butter, simply place all ingredients into a bowl and mix well.
Take your cashew "meal" and place in to a mixing bowl. Add remaining ingredients and mix well.
Form about 10-12 small No-Bake Cookie Dough Balls and place on wax paper (if available) into a storage container. Place in the fridge or freezer for a delicious snack or treat!
A few weeks ago I was scouring Pinterest for new recipe ideas and stumbled upon this beauty. Apparently it was all the rage a few years ago and I never got the memo, have you tried these before? Wowza, I'm in love. I love how simple and healthy this recipe is. When my sweet tooth kicks in around 3PM, I can whip up this bad boy and feel like I'm having a decadent treat! Don't take it from me, go make one for yourself. Add whatever toppings you please, go nuts 🙂 Speaking of which, those would be delicious sprinkled on top...
