Baked Chocolate Peanut Butter Banana Boats

A few weeks ago I was scouring Pinterest for new recipe ideas and stumbled upon this beauty. Apparently it was all the rage a few years ago and I never got the memo, have you tried these before? Wowza, I'm in love. I love how simple and healthy this recipe is. When my sweet tooth kicks in around 3PM, I can whip up this bad boy and feel like I'm having a decadent treat! Don't take it from me, go make one for yourself. Add whatever toppings you please, go nuts 🙂 Speaking of which, those would be delicious sprinkled on top...

Baked Chocolate Peanut Butter Banana Boats
2 Ripe Bananas
2 Teaspoons choc chips (I used Enjoy Life that are gluten/dairy/soy free)
2 teaspoons organic peanut butter (or not butter of choice)
2 teaspoons unsweetened shredded coconut
pinch of sea salt
Optional Toppings: Raisins, minced dates, chopped nuts

1. Preheat oven to 350
2. Slice each banana approx 3/4 of the way open
3. Spread banana apart and drizzle with peanut butter, choc chips, shredded coconut and a pinch of sea salt.
4. Wrap your bananas separately in tin foil with the top half of the banana exposed and place on a cookie sheet
5. Bake in the oven for 15 minutes
6. Either devour in the banana peal or place into a bowl
